1 | cup | uncooked Riviana rice | |

3/4 | cup | chopped onion | |
|
|||
1/2 | cup | chopped green pepper | |
|
|||
1/2 | cup | chopped celery | |
|
|||
1 | can | ( 14-oz. ) stewed tomatoes | |
|
|||
1 | cup | water | |
|
|||
1 1/2 | teaspoons | salt | |
|
|||
1 | teaspoon | chili powder | |
|
Heat 2 tablespoons fat in large skillet; add rice. Brown lightly, stirring frequently. Add remaining 1 tablespoon fat, onion , green pepper and celery; cook until soft. Add remaining ingredients, cover pan tightly, and simmer for 20-30 minutes. If rice is then not sufficiently tender, add a little more water, cover, continue to cook until soft.
